Colombia Finca Las Flores Chiroso Single Origin Filter

Huila is one of the most renowned coffee-growing regions—and for good reason. Huila offers a perfect combination of fertile soils, high elevation, and an ideal climate for growing specialty coffee. Located in Acevedo, Finca Las Flores stands out in this region. Here, Jhoan Manuel Vergara Ayure produces exceptional microlots and grows varieties such as Pink Bourbon, Tabi, Java, and Maracaturra. Founded in the 1990s, Finca Las Flores is now an estate with 90,000 coffee trees. In 2006, the Ayure family began their journey in specialty coffee by participating in the Cup of Excellence competition. Since then, now with the support of their son Jhoan, they have dedicated themselves to further developing and distinguishing their coffees. One example of this dedication is this wonderful natural Chiroso microlot, which underwent a so-called thermal shock. This technique, which concludes the fermentation process, uses a combination of hot and cold water to open the pores of the beans and fix volatile compounds. The Chiroso variety was rediscovered in Colombia in the early 2000s and remains found almost exclusively in Colombia to this day. Its popularity grew when a Chiroso coffee took first place in the 2014 Cup of Excellence competition.
