La Cristalina is a family-run farm located in Quindío, Colombia, at an altitude of 1,350–1,500 meters above sea level. The farm has been in the Grajales family for over 50 years and is now run by brothers Alberto and German.
The farm's unique microclimate plays an important role in coffee production. Warm, sunny mornings, rainy afternoons and cool nights allow the coffee cherries to ripen slowly, developing plenty of sweetness and complexity.
And the coffee? This castillo is anything but subtle. Expect a rich, full-bodied cup packed with deep notes of dried plums, dark berries and red wine. Its pronounced fermented character brings a boozy, almost wine-like intensity, accompanied by  jammy sweetness and a touch of fruity acidity. Coffee for funky snobs !!
Maybe more of a filter coffee as it can be bit intense on espresso, but definitely works as a turbo shot (1:4 ratio, 12seconds).
