Description

Discover our Cafè Agrario specialty coffee from the heart of Tolima, Colombia. Grown at elevations between 1,700 and 1,900 meters, this washed coffee offers a sweet, rounded profile.

Let yourself be enveloped by notes of brown sugar, dried fruit, and vanilla, complemented by a smooth body and medium acidity. An exceptionally sweet and velvety cup experience.

Café Agrario is an association of producers from Ortega, in Tolima. The association was founded with a political purpose, and its leader never intended to seek help from the government or other organizations aiming to help farmers achieve better yields and quality.

At first, this caused no problems for the members, but over time, as new associations formed in the region, they realized that this kind of assistance is the reason associations are created—not for political purposes. The original political leader came from the conflict and guerrilla movement for which Tolima was known in previous years.

After 6 years, the association changed leaders and direction and began receiving help from government organizations. Progress in terms of quality and quantity has been enormous: they have focused on specialty coffee, processed as fully washed coffee because drying is particularly difficult in their climate.

The farmers soak the coffee to remove unwanted material and empty beans, then depulp the cherries and leave the beans to ferment for 12–16 hours. They then wash them thoroughly before placing them in parabolic solar dryers, where they dry for 8–12 days until they reach 10.5% moisture.

The farmers’ biggest challenge in the area is a lack of knowledge and limited communication, as they are very far from any city. For this reason, Siruma’s workshops have been essential for gaining new knowledge and improving quality and moisture control.
