Description

Sao Silvestre is a staple Single Origin in our coffee collection here at Bailies. For ten years we have been working with the Andrade family and receiving coffees from their main farm Sao Silvestre and sister farm Capim Branco.

A well-established, family-run coffee company, Andrade Brothers, has been operating for generations in the Minas Gerais region of southern Brazil. Brothers Ismael and Eduardo have established themselves among the country's most respected coffee producers. Alongside their team, they have earned regional and national recognition through prestigious competitions, including the Cup of Excellence Brazil.
With over 100 years experience in producing the finest coffee in Brazil, the Andrade family have been working in coffee since 1901. Over the last several years, the family's drive to improve their produce has lead them to implement various new processing and fermentation techniques and the installation of new equipment and machinery for harvesting.
Process

The cherries are collected with the help of mechanical harvesters and brought to the farm. They are carefully selected and graded, all impurities are removed and the cherries are pulped. Sticky parchment beans with the mucilage still attached are then spread out onto raised beds where they are slowly dried over the course of 2 weeks. During this time they are turned multiple times a day and further manual selection is taken place. When the beans are dried the parchment is removed at the on-farm dry mill.
