Named for the indigenous Batak farmers, this triple picked coffee grows in the Lake Toba region of Northern Sumatra. Wet hulling dries it faster, which matters where the rain comes down hard, and builds a profound syrupy body. Sweet and heavy, herbal and maple, without the earthiness most Sumatrans carry.

Description

Named for the indigenous Batak ethnic farmers, this triple-picked coffee grows in the Lake Toba region of Northern Sumatra. Unroasted, it takes on a deep blue hue that is a result of a unique form of processing developed in Indonesia called “wet-hulling”. This enables faster drying – which is critical, since it rains torrentially in Sumatra. It also helps develop a profound, distinctive, syrupy body. Coffee Characteristics: A sweet and heavy cup, combination of herbal and maple syrup. Much more delicate than an average Mandheling. Lacking heavy earthy flavors typical of Sumatrans, most likely because of the special triple-picked preparation used to remove defects during processing.
