Popayan Reserve Decaf

This decaffeinated coffee is produced by selected farms in the Popayan region. The coffee is milled locally and transported to Caldas, where it is decaffeinated. The decaffeination process used for this coffee is unique. Caffeine is extracted from the coffee using a natural byproduct of sugar cane and water. This process avoids the excessive temperatures common in other decaffeination methods and leaves a coffee with increased sweetness that is much closer to the original caffeinated coffee in roast and taste.
The great advantage of this process, aside from the flavor profile, is that it was developed and is carried out in Colombia. This enables vertical integration of the supply chain without the added costs and transportation involved in sending the coffee to decaffeination facilities in Mexico, Canada, or Germany, and the profits remain in the country of origin.
