The spiritual successor to the legendary Knife to a Gun Fight, which our good friend David Flood made to the National Brewers Championship finals with and you Folkers sold out in less than 48 hours. This year we were lucky enough to get our hands on some more of Zukuka’s “reserve” lots. Last year hailed from Budwale, this iteration from Bududa.

When cupping and sorting day lots, the team at Zukuka are looking for the good, the bad and the ugly. Every now and again they get the exceptional, this then gets marked as a reserve lot. Obviously when originating from our beloved Bududa, it only made sense to be equine in nature. Just like when Ash’s Ponyta evolved mid race into a beautiful Rapidash, Unicorn, mid harvest peaked into this reserve lot. No fancy processing gimmicks, just high quality cherry from the producers in Bududa, processed naturally and cared for incredibly well.

Pegasus to a Horse Race, glides in with green apple acidity, with red currant and blackberry sweetness. Gallops into marscapone and cheesecake tang, before cantering in the finish with some pumpkin spice and vanilla. Oof. I know who my money's on. Giddy-up.

This is just a starting place. We encourage experimenting and breaking the rules.

DOSE :   15g

YIELD :   250g

TIME :   2:45 - 3:15 minutes

NOTES :   Add 3x the dose weight of water and bloom for 30 seconds. Then add another 3x the dose weight of water and bloom for 30 seconds. Then steadily add the remaining water over the next 30 seconds. Aim for 3 minutes total brew time.
