Description

A coffee that tells a story of place, family, and Specialty vision. This lot of Pacamara Gigante comes from the heart of Nueva Segovia, between the municipalities of Jalapa and Mozonte, where elevations ranging from 1,300 to 1,700 meters, clay-sandy soils, and mixed cultivation in sun and shade create an ideal environment for the most refined expression of this extraordinary variety.

The producer is Luis Alberto Balladrez Moncada, the fourth generation of a historic coffee-growing family, now joined by the fifth. His vision took shape with the creation of Beneficio De Café Las Segovias, a processing center designed to ensure complete control over fermentation, drying, and the coffee’s final quality. The La Bendición and Un Regalo de Diós farms are part of a broader project that has earned important recognition over the years, including first place in the 2018 Nicaragua Cup of Excellence.

Harvest takes place between December and March, with only perfectly ripe cherries selected. The coffee is then washed and undergoes controlled aerobic fermentation, followed by slow drying on raised beds. This approach preserves exemplary aromatic clarity and brings out the flavor definition typical of Pacamara, a variety renowned for its exceptionally large beans and complex aromatic potential.

As espresso, this coffee has a full, rounded body that supports a sweet, precise flavor profile. Clear notes of ripe apricot emerge in the cup, intertwined with hints of red apple and raspberry for an elegant, never overpowering fruitiness. The finish develops into more indulgent notes of milk chocolate and caramelized almond, leaving a lingering, creamy, harmonious aftertaste reminiscent of fine pastries.

This coffee brings together extraordinary genetics, a remarkable growing region, and meticulous processing. It authentically represents Luis Alberto Balladrez Moncada’s production philosophy and the quality identity of Beneficio Las Segovias.
