Description

A delicious combination of the Castillo, Caturra, and Colombia varieties, washed processed, with a cocoa aroma, creamy body, caramel and fruit flavors, and moderate acidity. Thanks to its balance, it has been one of our customers’ most-requested coffees for more than five years.

Producing a high-quality coffee like this one, so highly regarded by consumers, requires the right combination of several factors. Optimal agro-environmental conditions (soil fertility, solar radiation, rainfall patterns, and climate variability) that support the healthy development of plants and fruit. A coffee variety or varietal with genetic characteristics that give it the potential to produce delicious flavors. And careful farm practices, such as proper crop management, harvesting the beans at their peak ripeness, and strict processing methods, complemented by fermentation that brings out the coffee’s flavors through the sugars in the pulp.

All this is complemented by a carefully executed medium-dark roast at Varietale, which transforms the precursor compounds in green coffee into incredible aromas and flavors in the roasted coffee.

Specialty Coffees are traditional Colombian varietals: rich and chocolatey, or with plenty of caramel, balanced in sweetness, acidity, and mouthfeel. They are purchased directly from producers at higher prices than those on the conventional market, providing an additional incentive for their work and the opportunity to build long-term relationships.
