What makes organic Chiapas coffee from Mexico special:
One of the world's largest coffee producers, Mexico generates nearly 6 million bags per year. Coffee grows in a highly diverse tropical zone, so each plantation produces a coffee with its own distinctive characteristics.
In Mexico, coffee comes primarily from three regions: Oaxaca, Veracruz, and Chiapas. All these plateaus sit at over 1,500 m above sea level and have rich biodiversity, essential for coffee aromas.
Types of coffee in Mexico:
The beans we offer from Mexico come from the southern region on the Atlantic coast. This area of the Sierra Madre in Chiapas saw coffee arrive on its shores in the 18th century. It is a volcanic region. Flowering continues through May, and the coffee is then exported from December through May.
How organic Chiapas coffee from Mexico is prepared:
This organic Arabica is grown on these lands at around 1,500 m above sea level, in volcanic soils rich in biodiversity. It is wet processed, like Palomar from Peru, which is also organic. Once this step is complete, the cherries are depulped. They are then immersed in water to begin fermentation. After being washed once again, the coffee beans are dried in the sun for one to two weeks.
L’Originel's roasting method:
There are several ways to roast coffee beans. The most common method used by industrial roasters is called “flash” roasting. It is the most profitable and cost-effective option for this type of brand. It involves roasting the coffee bean at a very high temperature for a very short time. This destroys the beans' aromas, acidity, and bitterness, leaving us with a flat, characterless cup.
L’Originel uses the artisanal method. It involves slowly roasting the coffee using specific roast profiles suited to the characteristics of the region where the coffee comes from.
For the coffee from Mexico, the ideal “French-style” roast is around 218°C for 17 minutes. This is ideal for bringing out all the characteristics of this organic Grand Cru.
Once it arrives at our premises, it is packed in eco-friendly 250 g or 1 kg bags.
