Finca La Providencia sits at around 1,500 meters in the hills of Chalchuapa, one of El Salvador’s oldest coffee towns. Café Pacas has managed the farm since 2007 and has earned a reputation for consistently high-quality work during that time. What sets La Providencia apart from other fincas is its character as an experimental farm: more than 54 different varieties are cultivated here in small plots under scientific observation to compare productivity, disease resistance, and cup quality. For a coffee family with five generations of roots in cultivation, this is no coincidence, but a philosophy.

This coffee comes from a plot of just 1.5 hectares, reserved specifically for this variety. The plants grow in nutrient-rich sandy loam beneath a dense canopy of shade and benefit from the slow ripening at this altitude. For natural processing, the cherries are dried with the whole fruit intact on raised beds, turned several times a day, and covered at night. It’s labor-intensive, but this patient process is precisely what gives the coffee its density and complexity.

Santa Ana is one of El Salvador’s most renowned coffee regions, and Café Pacas is one of the names that has helped shape that reputation. In recent years, El Salvador has regained considerable international attention—roasters that long focused primarily on Ethiopia or Colombia are increasingly discovering what the fincas in this region have to offer.
