Jemen Mocca Matari

Origin
Authentic mocha coffee traditionally comes from Yemen, and Matari is probably the best known. In the 6th century, Coffea Arabica was brought from Ethiopia and first cultivated here in Yemen. This coffee comes from the Bani Mattar region, located west of the capital, Sanaa. The coffee grown here at an altitude of 1,900 to 2,100 m produces small, concentrated beans. Over the centuries, coffee processing in Yemen has not changed much. As with all naturally processed coffees, the cherries are first dried whole, with their skin and pulp intact; the skin and pulp are then removed with a millstone. Deliberate over-fermentation gives this coffee its distinctive flavor, highly prized by connoisseurs.
