Founded in 2011, the AAPICUC association helps smallholders (who own about 3 hectares each) grow their coffee while respecting biodiversity. The association now has 74 independent small-scale producers.

The water used to wash the coffee is rigorously filtered through natural systems to prevent contamination of local waterways. The cooperative structure also ensures fair compensation and direct technical support for producers, away from speculative markets.

Tasting Tips

Gentle brewing methods (filter, Chemex, V60) are ideal for bringing out its floral character and clarity, but it also makes a surprising espresso.
