This season, we’re proud to present a Natural Sidra from Fredy Orantes in Fraijanes, Guatemala. Sidra is a rare specialty coffee variety, a cross between Typica and Bourbon, known for its complex, layered fruity and floral profile. Its high sensory potential, demanding cultivation, and limited availability worldwide make it a highly prized variety among specialty producers.

Fredy’s farm is located near Guatemala City, where cool conditions at high elevation lead to slow coffee cherry ripening and vibrant flavor development. After careful selective picking, the ripe cherries undergo approximately 48 hours of controlled fermentation. They are then dried on raised beds for 22 days, turning regularly to ensure even drying under the Fraijanes sun.

The cup opens with delicate aromas of oolong and rose. When the coffee is hot, you’ll taste layered notes of chamomile, sencha lemon, mango, and green strawberry, with subtle, lightly alcoholic notes. As the coffee cools, notes of wild peach come through more prominently, with a sweet vanilla finish that lingers gently.

A recipe for the perfect espresso depends on many factors: machine, grinder, water, portafilter basket, beans, etc. At our bar in The Hague, we usually start with this recipe:

19 grams of coffee for an output of 45 grams of espresso (double espresso).

We start with a 25-second extraction time.
