REGION: Armenia, Quindio

FARMER: Luz Helena Salazar

FARM: Maracay

ALTITUDE: 1600 masl

SPECIES: Arabica

VARIETY: Gesha

PROCESSING: Washed

Luz Helena and her team of pickers select only the ripest cherries. The cherries are then transported to the sorting area at Maracay, where the team meticulously hand-sorts them and
flotation removes any low-density, unripe, or defective beans.
Once selected, the cherries are transported to the La Pradera processing center. Here, the cherries undergo a 30-hour water fermentation, a crucial stage that enhances the coffee’s
aromatic profile. This controlled fermentation process allows the sugars, organic acids, and other compounds in the cherries to break down gradually, encouraging
the development of a complex profile. The 30-hour fermentation period is carefully calibrated to balance aromatic complexity and enhance sweetness. The result is a crisp, lively character.
After fermentation, the cherries are depulped and the mucilage is carefully washed away.
The water used in the washing process is recycled and reused for flotation of subsequent batches of
cherries.
Once washed, the coffees are spread out on raised beds in greenhouses. The team monitors them closely to
ensure even drying and optimal quality (11% moisture content).

Ideal for: moka pot, espresso, filter coffee.                    Weight 250g
