Cesar, together with his team of pickers, harvests only the ripest cherries. The cherries are then taken to the sorting area at La Esmeralda farm, where the sorting team hand-sorts and floats them to remove low-density, unripe, or defective cherries.
After sorting, Cesar subjects the cherries to 45 hours of aerobic fermentation, a crucial stage that enhances the coffee's aromatic profile.
This method enhances the coffee's intrinsic aromas, creating a rich cup deeply connected to its origin.
Once fermentation is complete, the cherries are moved to a concrete drying area on the roof of Cesar's house. Here, they are spread evenly in thin layers to ensure constant airflow and exposure to sunlight. The cherries are carefully monitored and turned regularly to achieve even drying and prevent over-fermentation or mold.
The drying process can take 10 to 15 days, during which the fruit's sugars and aromas slowly permeate the beans. This creates a unique profile characterized by intense fruitiness, sweetness, and body, with a moisture content of 10%-11%.
