Yirgacheffe is the name most people picture when they think of Ethiopian coffee, and for good reason. This lot comes from Konga, in the heart of the region, where coffee is grown by smallholders and delivered as cherry to local processing sites.

The varieties are 74110, 74112 and 74165. They are selections developed by Ethiopia's Jimma Agricultural Research Centre from local heirloom coffee, and they're the backbone of many of the region's best lots.

As a natural, the cherries are dried whole, which pushes the fruit forward. Cranberry comes first, bright and a little tart, then ripe peach as it softens. It finishes on Earl Grey: bergamot, black tea, and a clean dryness that keeps you going back.

Brew it as a pour over and let it cool. The peach gets juicier as it does.
