El Salvador – Finca Los Angeles

Finca Los Angeles is a 16-hectare farm founded in 2017 by Los Naranjos Coffee. Following a natural disaster in the region, the farm became part of the area’s redevelopment and earned 5th place in its first Cup of Excellence competition in 2020. With its rare flat topography and young, Finca Los Angeles has since gained recognition in several European markets.

Harvest takes place from January to March, with cherry ripeness evaluated through Brix sampling to ensure optimal maturity. Selected cherries are processed as a natural, pre-dried for three days, then placed on raised beds for 30 to 40 days until they reach the ideal moisture level.

At 1400 masl between the El Pilón and El Águila mountains, cooler temperatures support slow and even drying, contributing to stability and clean flavor development. In the cup, expect refreshing notes of melon and green grapes, balanced by the gentle sweetness of cane sugar.

The perfect espresso recipe depends on many factors: machine, grinder, water, filter basket, beans, etc. At our bar in The Hague, we usually start with this recipe:

19 grams of coffee for an output of 45 grams of espresso (double espresso).

We start with a 25-second extraction time.
