Description
“Café Sueño” comes from the southern Mexican region of Chiapas, one of the country's most important coffee-growing areas. There, it is grown mainly by many smallholder family farms, which often pool their harvests in cooperatives. One well-known organization in the region is CABONOCH, where thousands of producers work together and market their coffee.
The coffee grows in the mountainous highlands of Chiapas, usually at elevations between approximately 1,100 and 2,200 meters. In this cool, humid climate, Arabica varieties such as Bourbon, Typica, and Caturra thrive particularly well. The coffee cherries are generally hand-picked and then processed using the so-called washed method, in which the fruit is removed and the beans are washed and dried. By working together in cooperatives, smallholders can pool their harvests, obtain better prices, and often adopt organic or fair-trade farming practices. The name “Sueño” (Spanish for “dream”) often symbolizes the idea of producing high-quality coffee sustainably and thereby securing the livelihoods of families in the rural regions of Chiapas.
