Description

If you love coffee but prefer to drink it decaf*, our DECAF is just for you. Notes of maple syrup, sesame, and chestnut make this coffee a true taste experience—even after decaffeination!

The green coffee is a blend of the Catimor and Sarchimor varieties and grows at an average elevation of 1,250 meters above sea level in the Veracruz region of Mexico. We source it directly from Farm Rancho San Felipe, with no middlemen. The De Gasperín family has run the farm since 1924 and also works with other producers in the region.

In Mexico, the beans are decaffeinated using the Mountain Water Process. This is an especially gentle, chemical-free method. To decaffeinate the coffee, the company Descamex cleans a batch of unroasted coffee beans and soaks them in water. The water bath opens the pores of the beans, washing out water-soluble compounds—including caffeine.

* The workers use activated carbon filters to remove the caffeine from the resulting liquid. Next, a new batch of coffee beans is added to the saturated but caffeine-free water. The caffeine from the beans then passes into the liquid, while the remaining compounds stay in the green coffee. The liquid is cleaned again using activated carbon filters, and the process starts over until the green coffee contains less than 0.01% residual caffeine. The beans are then dried and shipped onward.
