* A 250g bag of pure joy!

For this exceptional lot, we hand-selected only the ripest coffee cherries of the Papayo variety, ensuring superior quality. These cherries underwent a complex fermentation process in a rigorously controlled anaerobic environment, followed by depulping. They then dried for a few days to reach an optimal moisture level before being returned to fermentation tanks for rehydration with selected yeasts and bacteria. Finally, at the end of this meticulous process, the coffee was returned to raised drying beds.

**Drying time**
27 days on raised drying beds in the sun, followed by an essential 3-month stabilization phase in a rigorously temperature-controlled environment, ensuring optimal conditions to preserve quality and ensure product durability.

**Lot size:** 128 kg

Over the years, Aroma Nativo has built connections between lesser-known Colombian coffee growers and renowned roasters around the world.
In 2022, Luis Marcelino, founder of Aroma Nativo, took things a step further by launching the “Veci” project. This is a collaborative production initiative for coffee growers who follow good agricultural practices but lack the infrastructure needed to process their coffee on their farms. Aroma Nativo supports them by purchasing their coffee cherries at a high price and drawing on its fermentation expertise and processing facilities in Pitalito, in the Huila region.
Throughout this process, Aroma Nativo ensures full traceability for all coffees and does not blend them. The company believes that each farm and each harvest week produces a coffee lot with unique characteristics. That’s why it works exclusively with micro-lots and nano-lots.

Here’s a fascinating tidbit: farmers in the southern part of the Huila region affectionately call this variety “Papayo” because of its shape, which resembles a papaya. Others call it “Ombligon”—meaning “navel cherry” in Spanish—highlighting its distinctive appearance. Yet genetic analyses reveal a surprise: this variety is actually a mutation of a traditional Ethiopian variety (*Landrace*). Let yourself be charmed by the story of this remarkable variety.
