A natural Geisha produced by Jhoan Vergara in Acevedo, in the Huila Department of Colombia. The Geisha variety traces its roots to the Ethiopian village of Gesha and is prized for its aromatic finesse, highlighted here by the natural process. A lot from the Coffee Heroes series.

Profile: Cream and strawberry — wild strawberries, fresh cream, apple; low acidity, very silky and full-bodied. GCB Score 9.5/10.

The producer

Finca Las Flores (about 16 hectares) is located in Acevedo, in southern Huila. Jhoan Vergara is the third generation of a coffee-growing family and took over the finca in 2018, shifting it from mass production to specialty varieties (Pink and Red Bourbon, Tabi, Java, Chiroso, as well as experimental Sidra and Ombligón). He is also a cup taster and roaster: in 2019, he won the «Master of Coffee» competition in South Korea. On the finca, he uses a microbiology lab and techniques such as «thermal shock» to control fermentation.
