Description

Ethiopia Deri Nigi Premium Natural Espresso - Single Origin.

Deri Nigi Premium is a carefully developed natural coffee processed by Testi Coffee at Deri Nigi Station. Testi works closely with local smallholder farmers to select cherries at peak maturity. For this lot, approximately 90% of the cherries are optimally ripe, with 10% selected at an overripe stage to increase sweetness and fermentative complexity.

The cherries are first immersed in water, where lower density floaters are removed, leaving only the denser fruit for processing. The selected cherries then undergo a two hour soak in fresh water intended to support the development of the coffee’s sweet, fruit driven character. After soaking, the cherries are spread as thinly as possible; with approximately 25 kilograms allocated to each raised bed. The beds are positioned in high airflow areas with limited direct sunlight and covered with shade netting. Over 30 days, the cherries are carefully dried under shade, allowing moisture to migrate evenly through the fruit and coffee seed. This extended drying period is designed to protect the flavour compounds developed during processing while encouraging greater sweetness, structure and complexity.
