This coffee comes from Bajo Canet Farm in Costa Rica, where a rather unique processing method brings out an incredibly expressive and fruit-forward character.
What makes this coffee particularly interesting is its raisin Honey processing. Freshly harvested coffee cherries are first dried on raised African beds for three days, leaving all the sticky fruit mucilage intact. The coffee then continues to dry and ferment slowly, developing intense sweetness and a complex, fruity character.
This extended drying and fermentation process creates a rich, juicy cup with plenty of ripe fruit sweetness, a pronounced fermented character and a long, lingering finish. Another one for funk fans, intense but still delicious. GRIND THIS ONE COARSER AND YOU WILL GET A LOT OF GESHA CHARACTES!!
