Description

Costa Rica Ivan Solis Higueronal Anaerobic Natural Espresso - Single Origin.

Finca Higueronal sits at 1,600 metres in Santa Maria de Dota, where Oscar Antonio Ureña has cultivated coffee since 2008. This lot uses Centroamericano F1, a variety selected for its resilience to pests and disease as well as its distinctive cup character. Cherries are selectively handpicked, washed at Solis and Cordero Micro-mill, then fermented anaerobically in sealed tanks for 96 hours. They are dried on raised beds for approximately 18 days, allowing the fruit-forward fermentation to settle.

Oscar has been experimenting with pest and disease resistant varieties to reduce input costs while exploring new cup profiles. His choice to process at Solis & Cordero Micromill is in large due to the support that they offer to smallholders in the Santos region through processing, quality control, traceability, export services and innovative, quality focused post-harvest methods.
