Description

  • ZALA: Specialty Coffee from Guji, Ethiopia

ZALA is a specialty coffee with a story worth sharing. It begins in the lush highlands of Guji, Ethiopia. There, smallholder farmers cultivate heirloom Arabica trees using traditional, sustainable methods. This region, rich in biodiversity and cultural heritage, produces some of the world’s most complex coffees. Grown at altitudes between 1,700 and 2,200 meters, ZALA benefits from the ideal conditions that shape its unique character. Volcanic soil, cool mountain air, and natural forest shade all contribute to its exceptional quality.

Each step of ZALA’s journey is guided by care and precision. From the way it is grown to how it is roasted, ZALA reflects a deep commitment to transparency, sustainability, and taste. We work through direct trade relationships with the farmers, ensuring fair pay and long-term collaboration. This approach allows us to make a positive impact while guaranteeing traceability from farm to cup. Sustainability is not just a word to us — it’s built into everything we do.

ZALA is a washed coffee, processed at origin using clean water and time-honored techniques. Ripe coffee cherries are hand-picked and sorted to remove defects. The cherries are pulped, fermented, and then thoroughly washed to remove mucilage. Finally, the beans are dried on raised beds, turned often for even drying, and monitored to avoid overexposure to the sun. This washed method enhances clarity and brings out bright, vibrant notes in the cup.

The flavor profile of ZALA is what sets it apart. Expect a clean and crisp taste with pronounced notes of fresh citrus and floral tones. There’s a delicate fruity sweetness that lingers with every sip. The coffee has a smooth and refined finish, making it both approachable and memorable. Whether brewed as a pour-over, filter coffee, or espresso, ZALA offers an elegant experience that never feels dull.

Guji, the origin of ZALA, is a celebrated coffee-producing region that lies near Sidama. The natural surroundings are strikingly green, and the land remains mostly untouched. Farmers in Guji often work on small plots of land passed down through generations. They know their soil, their trees, and the rhythms of the land. With altitude and climate working in harmony, the result is coffee with depth, complexity, and a sense of place.

What makes Guji coffees, including ZALA, so remarkable is the combination of environment and expertise. Cooler temperatures at high altitudes slow down the maturation of coffee cherries. This extra time allows sugars to develop fully, creating denser beans with rich flavor. Traditional methods like hand-picking and natural drying further preserve the integrity of the beans. The result is a cup that is balanced, bright, and brimming with aroma.

At our roasting facility in Denmark, we aim to bring out the best in ZALA. Each roast is designed to highlight the coffee’s natural elegance. We take a light to medium approach, preserving the coffee’s citrus and floral qualities. Roasting in small batches allows us to maintain control and consistency. Our goal is not to overpower the beans but to let their origin speak clearly.

ZALA is more than just coffee. It’s the product of human connection, respect for nature, and a passion for quality. Every bag you open carries the story of the farmers who nurtured the trees and the land that gave them life. It’s a coffee that stands for something — fairness, sustainability, and transparency. And of course, it delivers an outstanding cup every time.

From the highlands of Ethiopia to your cup, ZALA brings you specialty coffee that is vibrant, ethical, and unforgettable. Let each sip remind you of the journey it took to get here — and the future it helps build.
