Description

We are pleased to offer this coffee from the Dung K’no farmers cooperative in the central highlands of Vietnam. For those who enjoy sun-dried/ natural processed coffees this will be a treat as well as a great example of the anaerobically fermented variation on that method.

You’ll notice this is truly a unique coffee from first dry aromatics to first sip. Try any preparation method from pour-over to espresso, the complexity and liveliness are highlighted. The cup is creamy with tropical cacao, dark and milk chocolates, jujube, amaretto, and berry compote. Complex and bright, it is still a very balanced and complete composition with a clean finish.

All coffee is a fermented product, from the washed and honey process to natural/sun-dried processing methods. The fermentation that the coffee fruit and seeds undergo after harvest can vary wildly depending on weather conditions, local resources, and intended outcome. Simultaneously there can be great variation among anaerobically fermented coffees. In this example very small batches are meticulously sorted for ripeness and fermented with strict time and temperature controls in stainless steel vessels in a low oxygen environment before sun drying on raised covered beds. This time and labor intensive process is carefully controlled for a tremendous result. We sincerely hope you enjoy this stand out coffee while it lasts.
