We choose coffees that undergo a clean decaffeination process that preserves all the characteristics of the bean, such as the Mountain Water Process or Swiss Water Process.
This method uses water from glaciers. By soaking green coffee beans in water saturated with the coffee's soluble components, except for caffeine, only caffeine molecules move from the beans into the extract, preserving the other properties. It preserves all the origin notes, since this process causes minimal deterioration of the beans and better preserves all their characteristics.
