Moon Blossom is as gentle as a lullaby to the moon, as delicate as a jasmine flower blooming in the silence of the night. It is an ode to tenderness, to the poetry of suspended moments. A nuanced sensory journey, where each aroma reveals itself subtly, like a violin melody whispered to the stars.

🌱 Terroir & Variety 🌱

Yunnan, between tropical forests and mountains

In southwestern China, in the highlands of Pu’er, Zebra Estate stretches across more than 250 hectares at an altitude of over 1,850 meters. Here, coffee trees grow in the shade of a pristine tropical forest, in a natural environment that is particularly favorable to their growth.

The canopy protects the trees from direct sunlight and helps maintain soil moisture. Combined with significant temperature variations between day and night, these conditions encourage sugars to concentrate in the cherries and contribute to coffees with a silky texture and generous flavor profile.

It is in this setting that Zebra Estate grows Catimor, the variety behind Moon Blossom. This coffee showcases the potential of Chinese terroir and the diversity of flavor profiles it can offer.

🌸 Process 🌙

When coffee meets the tradition of jasmine tea

In China, jasmine (茉莉花) has symbolized purity, elegance, and sincerity for centuries. Its delicate fragrance holds a special place in Chinese culture, particularly in the tradition of jasmine tea.

To make this tea, the leaves are brought into contact with fresh flowers several times, gradually absorbing their aromatic compounds.

Zebra Estate draws on this expertise for its experimental Jasmine Co-Dark Dry process.

The coffee goes through three carefully controlled fragrance-infusing stages, in contact with real jasmine flowers. This method preserves the aromatic clarity characteristic of washed coffees from Yunnan while adding intense floral notes reminiscent of jasmine tea.

The result? A complex, delicate cup where white flowers meet the freshness of lemon and a lingering sweetness reminiscent of honey. An original way to bring two cultures deeply rooted in Chinese heritage into conversation: tea and coffee.
