The Gatomboya processing station is managed by the Barichu Farmer Cooperative Society (F.C.S.), a cooperative that brings together around 1,000 smallholder farmers, of whom about 900–950 are active members. The farmers grow coffee on very small plots and also produce macadamia nuts, corn, bananas, and beans.
At Gatomboya, coffee cherries are sorted before processing. First, they are depulped and then left to ferment overnight. Once fermentation is complete, they are washed and placed on raised beds to dry. Drying takes between 10 and 12 days.
