Honduras 18 Conejo Washed Organic Dark Espresso
In 1990, Elías Samuel Zelaya Siembra was the first organic coffee producer in Marcala with his coffee farm. His commitment played a major role in developing organic agriculture in the region, and he was able to convince many other producers to adopt sustainable farming practices. In 2012, a biodynamic farming association was finally founded.
The name “18 Conejo” comes from the Mayan calendar and reflects the Maya’s centuries-old cosmological knowledge in biodynamic farming. Today, Honduras 18 Conejo is produced by 11 different farming groups, including Luna Jaguar, El Caracol, Las Huertas, Dulce Luna, Las Mandarinas, El Conejo, San José, La Fernanda, El Beneficio, Alfa y Omega, and El Granadillo. The coffee is brought together at the El Beneficio washing station before processing.
The families make their living from the land they cultivate and benefit from both an improved microclimate and nutrient-rich soil—as does the coffee.
