Description
While the individual seeds are small, the flavor and dynamics are strong with this one. After harvest, the cherries undergo a 36 hour fermentation and then are sorted, depulped and then spend 15 hours in a dry fermentation tank before a final washing. This care and attention to process yield a very crisp apple forward Malic acid note before giving way to a very well structured, unrefined sugar sweetness.
