Description

Meet Papayo, our newest Colombian filter coffee from the Huila region:

An anaerobically fermented and washed process coffee, Papayo is full of bright and fruity acidity, balanced alongside some sweet and fruity notes. During cupping, we loved the character it expressed, all stone fruits, cranberries and a hit of citrus. Picked by us, specifically for filter brewing, this one is complex, but clean.

The Papayo plant itself is a bit of an anomaly, which makes it's background as interesting as the flavours and aromas it contains. A naturally occurring mutation in the San Adolfo in the Huila region, the Papayo variant has longer beans than other local varieties and offers more complex sweetness and floral aromas. Along with this, it is sought after by local farmers for it's resilience to infections and drought, along with being high yielding plants that have exceptional cupping qualities.

Our lot comes from the crops picked by Brayan Smith and his team on his Las Brisas farmstead. A third generation grower, Brayan is focused on producing the highest quality coffee he can, along with supporting other local producers to raise their standards with his help, equipment and knowledge.

Our Papayo is picked by the team on Las Brisas, where only the best cherries are selected. From there, the harvest undergoes a controlled anaerobic fermentation to increase the complexity of flavours along with ensuring the coffees signature qualities are enhanced. Post fermentation, the beans will be carefully and thoroughly de-pulped and dried on raised beds. This all leads to a vibrant, clean and fruit forward filter coffee we're excited to share with you. Sweet and zingy, full of character, give this a go.
