Produced by the bold Tadessa Yonka, high in the Gemecho Village of Ethiopia, this lot showcases a less traditional approach to processing, resulting in an unbelievable tasting experience.
The cherries are sealed in an oxygen-free environment for 96 hours, allowing microorganisms to break down sugars and organic matter before being laid out to dry for a further 30 days. This extensive and highly technical process allows more complex flavours to develop, resulting in a distinctive and layered profile. Huge thumbs up from us.
You'll experience the sweetness of tropical mango alongside juicy strawberry, complemented by a deep, full-bodied creaminess that carries through to the finish.
