This coffee comes from producer José Argüello of Finca Santa Cruz in the Chiapas region of Mexico. José is also the director of CAFECO, a regional producer’s cooperative. The cooperative supports farmers in the region and helps them market their coffees and increase the prices they receive for their hard work. Geisha coffees are known for their exceptional cup quality, especially when grown at high altitudes. The variety was collected from Ethiopian coffee forests in the 1930s and then perfected in Panama and is now grown through out Central and South America. This coffee was allowed to ferment in cherry for up to 200 hours before being washed and dried on patios. Perfecting this process has allowed the sweet berry notes in this delicious well balanced beautiful cup.
