About the coffee:
Bubble Gum begins at origin with a carefully controlled fermentation process designed to showcase the vibrant character of a classic anaerobic natural coffee.
Only fully ripe cherries are selected before undergoing a 36-hour anaerobic pre-fermentation in sealed GrainPro bags. This oxygen-free environment encourages the development of intense fruit character while laying the foundation for the coffee's distinctive sweetness. The cherries are then transferred into hermetic tanks and fermented under shade for an additional 96 hours at a stable temperature of approximately 23°C. During this extended fermentation, the coffee develops the vibrant fruit-forward profile that inspired its name, bringing together notes reminiscent of strawberry candy, bubble gum, tropical fruit, and red wine.
Following fermentation, the cherries are slowly dried over approximately seven days using a carefully managed mechanical drying process. Rest periods throughout drying help ensure an even reduction in moisture while preserving clarity, sweetness, and structure. Once drying is complete, the coffee rests for 30 days in GrainPro bags, allowing the flavors to stabilize and harmonize before export.
At Regent Coffee, our approach to roasting focuses on preserving the character created during fermentation rather than amplifying it beyond recognition. For Bubble Gum, we roast with a gentle profile that highlights the coffee's expressive aromatics while maintaining balance and drinkability. The goal is not simply to showcase intensity, but to reveal layers of flavor that unfold throughout the cup.
What we appreciate most about Bubble Gum is its honesty. It isn't the rarest variety or the most experimental coffee we offer. Instead, it represents what many coffee drinkers imagine when they think of a great anaerobic natural. Bright berry-like fruit, candy sweetness, hints of red wine, and its signature bubble gum character come together in a way that is both playful and familiar.
We believe great coffee shouldn't always require chasing limited releases or exotic varieties. Bubble Gum has become one of our favorite examples of a well-executed anaerobic natural, consistently delivering the profile that made this processing style so exciting in the first place while remaining one of the most accessible coffees in our lineup. The result is a coffee that feels playful yet intentional, expressive yet approachable, and a reminder that sometimes the classics become classics for a reason.
