Description

Coffee from the Los Santos region, in the San Ignacio de Acosta growing area, where the Castro family grows and harvests the crop. Committed to regenerative agriculture, the family works to preserve soil health and cultivate sustainably for future generations.

The coffee plantations are located in a mountainous region between 1,400 and 1,600 meters above sea level. Coffee cherries are harvested from December to February. The harvest is done by hand in 3 to 4 passes to ensure optimal quality.

Brewing: An ideal coffee for gentle brewing methods (drip coffee, Chemex, and V60), thanks to its roundness and delicacy

Process: Washed and then patio-dried

Flavor profile: A sweet cup with notes of nuts, chocolate, and lemon.

Roasted on-site using a gentle, slow method
