Produced by José Alberto Careta at his farm, Corrego Fundo, this lot is a quintessential example of the excellence found in the Cerrado Mineiro region. As the first coffee-producing region in Brazil to receive a "Designation of Origin" (similar to fine wine), Cerrado Mineiro is famous for its well-defined seasons and high-altitude plateaus. José utilizes the region's flat topography and consistent climate to master the Natural Process, meticulously drying the cherries in the sun to allow the sugars to soak into the bean. This careful stewardship at the Salgar subregion results in a sophisticated, uniform cup that represents the best of modern Brazilian sustainable farming.
