If you’ve been a fan of our previous naturally processed lots from Sidama, we think you’re really going to dig this exceptional lot from the farm Belayneh Bariso.

Sourced with the help of our import partners at Catalyst Trade, this single-farm lot was another standout on the cupping table. The relationship between Belayneh Bariso and Catalyst was forged through the hard work and dedication of Asnake Bekele, who was instrumental in convincing members of the Sidama Coffee Farmer’s Cooperative Union to implement raised-bed naturally processed coffees. Through his work, members began implementing new techniques and quality controls with their naturally processed coffees, and the results shine through in the cup.

Achieving such a high level of quality in naturally processed lots takes special care and attention to detail. Workers on Belayneh’s farm harvest cherries multiple times during the harvest season to ensure each cherry is only picked when it reaches perfect ripeness. From there, the cherries are rested on raised beds and turned six times per day to ensure even drying and reduce the risk of fermentation. After a period of time around 15-21 days, the cherries reach their ideal moisture content and are then rested in poly bags before being transported to the dry mill for further processing.

This organically-grown lot features a beautiful flavor profile of rose, peach, and watermelon. Naturally processed lots like this one can shine in any brew method, but we especially enjoy this coffee brewed as a pourover or Aeropress.
