Peru Ubiriki

This is a Geisha from Maria Cardenas in Chanchamayo, Peru, grown at 1,750 metres. Maria runs the farm with her husband and daughter, and they've built a name for high-quality Geisha.

Only ripe cherries are hand-picked. They're fermented for 12 hours, then pulped, washed and dried on raised beds for around 10 days, until the moisture comes down to 10%.

White flower comes first, then plum, with a hibiscus lift on the finish. We roast it for filter.
