Where Nature, Science, and Exceptional Coffee Come Together

Nestled in the breathtaking highlands of Volcán, Panama at the altitude of 1650–2000 masl, Flying Pumas is more than a coffee estate. It is a living sanctuary where nature, innovation, and exceptional coffees all exist in harmony. Surrounded by rich volcanic soils, lush cloud forests, and biodiversity corridors within one of Central America's most protected ecosystems, this remarkable estate dedicates 60 hectares to coffee cultivation, and 120 hectares to protected conservation land. Here, every coffee tells the story of its extraordinary surroundings.

A Sanctuary for Wildlife

At Flying Pumas, every coffee lot is named after an animal that inhabits the surrounding landscape, honoring the remarkable wildlife that shares their extraordinary ecosystem. From the playful Panamanian White-faced Capuchin monkeys to graceful White-tailed Deer, to the elusive Jaguarundi wild cat, Baird's Tapir, White-nosed Coati, Panther, Ocelot, and more, the estate is home to an incredibly diverse range of wildlife. And just like any natural ecosystem, each species plays a role in the delicate ecological balance that makes this region so special.

The Hummingbird Lot celebrates one of nature's most fascinating pollinators. These remarkable birds play a vital role in the reproduction and genetic diversity of flowering plants, helping sustain the rich vegetation surrounding the farm’s coffee trees. Their presence is also a natural indicator of floral abundance, signaling a healthy, thriving environment. By feeding on nectar and small insects, hummingbirds contribute to the movement of energy throughout the food web, supporting the interconnected relationships that sustain biodiversity. This deep connection to wildlife reflects Flying Pumas' dedication to regenerative agriculture and environmental conservation. By preserving these natural habitats and supporting native species, the estate creates an environment where exceptional coffee and nature can flourish together.

An Extraordinary Geisha Crafted with Precision

Grown in Panama's renowned high-altitude coffee region, Flying Pumas Hummingbird Geisha Honey is a stunning expression of its origin. The combination of mineral-rich volcanic soil, a distinctive mountain microclimate, and the celebrated Panamanian Geisha variety creates the foundation for a truly remarkable coffee, prized for its captivating floral aromatics, delicate elegance, and vibrant acidity. What makes this coffee even more extraordinary is its meticulously crafted Honey process with controlled anaerobic fermentation, designed to enhance the Geisha's natural sweetness, complexity, and character.

The journey begins with cherries harvested at optimal ripeness and transported to the processing facility within 72 hours in specialized 80 lb Ecotact bags. Upon arrival, the cherries spend 48 hours in a temperature-controlled cold chamber, where sugar concentration (°Brix), pH, and temperature are carefully monitored to ensure consistency and preserve quality.

The cherries are then depulped, leaving their naturally sweet mucilage intact. Divided into small 40 lb batches, the coffee undergoes 120 hours of sealed anaerobic fermentation at a carefully maintained temperature of 18–22°C. With a final pH of 3.8–4.1 and sugar concentration of 9–12 °Brix, this precisely controlled process helps develop the coffee's intricate layers of sweetness and complexity.

Drying is equally meticulous. The coffee first spends approximately 72 hours beneath shade mesh, allowing gentle, controlled solar exposure. It then undergoes an additional 25 days, or approximately 600 hours, of slow drying under permanent shade, encouraging gradual, even dehydration and preserving its delicate characteristics.

The result is an exquisite coffee that showcases the elegance of Panamanian Geisha with an added dimension of depth and complexity. Intense floral aromatics invite the first sip, followed by delicate fruit notes, a beautifully structured body, and a long, layered finish. Its refined character and lingering complexity create a captivating experience that rewards every moment of enjoyment.

A Coffee with a Greater Purpose

Flying Pumas believes exceptional coffee begins with a thriving ecosystem. Through regenerative agriculture, soil restoration, shade-tree planting, pollinator support, biodiversity conservation, and practices designed to capture carbon, the estate works to restore and protect the land while cultivating world-class coffees. Their approach combines a legendary coffee-growing origin with scientific innovation, including microclimate monitoring, precise fermentation, and controlled drying. Every decision reflects a commitment to producing extraordinary coffee while respecting the natural world.

Flying Pumas Hummingbird Geisha Honey is more than a rare coffee experience. It is a celebration of the delicate balance between nature and craftsmanship, where every cup reflects the beauty of Panama's highlands and a dedication to preserving the wild.
