Description
Shakiso is a village in Ethiopia's Guji zone, where coffee is grown at high altitude in rich red soil that sets it apart from neighbouring regions. This single origin is cultivated by smallholder farmers who deliver their harvest to be sorted and processed together.
Ripe cherries are dried on raised beds under constant rotation, developing a natural sweetness over several weeks.
The result is a fragrant, syrupy cup with a flavour profile that sings of elderflower, citrus bergamot and cooked blackberry.
