A ripping fresh-harvest Pink Bourbon from Finca El Espejo in Santa María, Huila. This coffee has everything we want from the variety: bright fruit, tons of sweetness, floral nose that makes great Pink Bourbon so recognizable. The honey process pushes the fruit a little further without getting in the way of the coffee itself. We taste pink citrus, peach lemonade, green apple and ripe mango—juicy and dynamic, with a sweet, sparkling finish.

About Finca El Espejo

Finca El Espejo is located in Santa María, Huila and managed by Reinel Borbon, a 48-year-old, second-generation coffee producer.

The four-hectare farm sits at approximately 1,850 meters above sea level, with around 13,000 coffee trees currently in production.

Reinel grows Pink Bourbon, Caturra, and Colombia, taking advantage of Santa María's high elevation and cool growing conditions to produce coffees with impressive sweetness and clarity.

For this release, it's all about the Pink Bourbon.

The Coffee

We're already huge fans of clean, fresh-harvest Pink Bourbon, and the honey process gives this lot an extra layer of fruit and texture while keeping everything remarkably clear.

That's what makes this coffee work for us.

The processing isn't the headline. It simply elevates an already beautiful coffee, bringing out more peach, mango, and saturated citrus sweetness without covering up the elegance of the variety.

The result is incredibly lively and refreshing—somewhere between ripe tropical fruit and a glass of peach lemonade.
