Description

Origin: Colombia

Region: Acevedo - Huila

Process: Hydro Honey

Varieties: Striped Bourbon

Producer: Process part Aroma Nativo - Luis Marcelino

Altitude: 1700m - 1750m

Tasting notes: Strawberry milkshake, peach, watermelon, incredible finish

250g bag of pure joy!

For this exceptional lot, we hand-selected the ripest Striped Bourbon cherries, ensuring optimal quality.

Striped Bourbon is a rare traditional mutation of Bourbon. This variety has distinctive red cherries with visible orange stripes along the fruit and produces a cup with fruity flavor, floral elegance, and vibrant complexity.

These cherries underwent a complex fermentation process in a rigorously controlled anaerobic environment, followed by depulping.

They were then dried for a few days to reach the optimal moisture content before being rehydrated in fermentation tanks using selected yeasts and bacteria.

Finally, after this meticulous process, the coffee is returned to the raised drying beds.

Drying time:

11 days on raised drying beds in the sun, followed by an essential 2-month stabilization phase in a rigorously temperature-controlled environment, ensuring optimal conditions for preserving quality and improving storage life.

For four years, Aroma Nativo has been building relationships between Colombian coffee producers and roasters around the world.

This year, Luis Marcelino, founder of Aroma nativo, is going even further by
launching the Veci project: collaborative coffee production among producers who have good agronomic practices but lack infrastructure and space on their farms to process their coffee.

Aroma Nativo provides expertise and processing facilities located in southern Huila and the department of Quindio.
