This Catiguá from Finca Turín combines anaerobic fermentation with the honey process: it was fermented for four days under anaerobic conditions, retaining its mucilage. The result is a sweet, intense, and complex cup, with a creamy texture and a more moderate fruity character than anaerobic natural coffees. An excellent introduction to exploring these processes: an expressive coffee that is easy to enjoy.
