Description

"Lazy Bird got tired of having to flap its wings so fast."

Region : Caconde

Process :  Natural

Variety : Sumatra
Elevation : 1200-1350 masl
Notes : Graham Cracker, Red Apple, Cocoa The coffee inside this bag is a testament to quality and transition. João Hamilton has been operating Sítio Cannaã in Caconde since 1979, but has only been producing specialty since 2004. After 20 years of traditional agriculture based on quantity instead of quality, João recognized that the coffee trees had lost their vigor and stopped producing. Caring for his community and his land, João transitioned to a regenerative farm model, planting gardens for biofiltration of waste water, inhibiting synthetic sprays, and acting as a model for fellow struggling farmers in the Serra Dos Ciganos region. Investing in a washing station this past year allows João to process and separate lots for over 40 different producers to improve quality collectively in the region. This coffee is packed with heavy cocoa nibs, a crisp apple-like sweetness, and a well structured body that finishes clean.
