Description
The Maragogype variety has a very low caffeine content and is known for its softness and digestibility. This variety is also known as ” Elephant Bean “, due to the large size of the bean.
For this evaluation, the coffee was tested in 94 ° espresso, with an extraction of 25 ml in 23 seconds. The degassing of the coffee took place in 72 hours.
The cream is hazelnut in color, with light shades. The nose reveals sensations of vanilla, sometimes of spices and tobacco. To the taste, the coffee has a delicate body, typical of high-altitude washings. Despite this, the acidity is not intrusive and the sweetness is very pleasant.
