Description
The highlands of Tarrazu is one of the most renowned growing regions in Costa Rica. La Falda Estate is located in the town of San Ignacio de Acosta, two hours from the capital San José. The word means “the skirt” in Spanish – like the folds of a skirt, the fields of the plantation wind around the slopes of a small mountain.
Here at an altitude of 1,700 meters there are optimal growing conditions for the coffee plants. The cool climate means that the coffee cherries only ripen slowly and that little caffeine is produced. The abbreviation “SHB” in the name stands for “Strictly hard beans”. Only green coffee from the highest growing areas (above 1,300m altitude) may be sold under this designation.
The farmer, Senor Miguel Diaz, combines his father’s traditional cultivation methods with the latest agronomic knowledge and manages to consistently and successfully use the difficult and delicate processing method “honey dried” when processing his green coffee.
His Yellow Honey coffee develops a sweet biscuit aroma, a full body reminiscent of fresh milk, a delicate hazelnut flavor and clear, mild notes of sweet cherry and tangerine.
