Our latest Limited Release offering is this vibrant Pink Bourbon varietal from producer Juan Cubillos part of the Coocentral Cooperative in the Gigante Huila region of Colombia, with which we have long-standing connections in direct trade.
Juan Cubillos is trained as an agronomist. This experience has allowed him to experiment with lots of processing techniques and higher quality varietals amongst which this Pink Bourbon truly stands out.
With an incredibly sweet, juicy body, and delicate sparkling acidity, we have loved this as a filter coffee for its delicate jasmine-like acidity and for the intense complex peach-like sweetness it brings to espresso. The farm is a family business located in the Miraflores moorland, one of the most important conservation centres in the region.
