Time for cake – Recipe for coffee cake with pecans

Now that the days are getting shorter and colder, we always enjoy a warm moment indoors. With a cup of coffee and something sweet. So it’s time for cake. And because nuts are really something for fall, we have a recipe for a nice coffee cake with pecans for you. So grab your stuff and get to work!

Ingredients coffee cake:

For a 25 cm cake tin (or similar cake tin) you need the following ingredients:• 200 grams of flour + 6 grams of baking powder (approx. 1.5 tsp)*• 200 grams of soft butter (tip: choose salted butter!)• 200 grams brown caster sugar• 4 eggs• Pinch of salt• 1 tsp vanilla extract• 60 ml strong coffee or espresso• 60 grams pecan nuts, chopped, plus extra for garnish• 175 grams icing sugar*) 200 grams self-rising flour is also possible, you have then no baking powder needed

How to make the coffee cake:

• Preheat the oven to 175 C.• Grease the mold. If you have a cake tin, you can also line it with baking paper so that it is easier to remove later.• Mix the butter with sugar until very smooth.• Separate the eggs and add the egg yolks to the butter-sugar mix, mix well until very light.• Add the pinch of salt and vanilla extract and mix briefly.• Make another bowl fat-free and mix the egg whites into a firm foam. You should be able to invert the bowl without the whipped egg whites falling out.• Quickly and briefly fold the egg white foam into the batter.• Finally add the finely chopped nuts and 60 ml of the coffee or espresso.• Pour the batter into the cake tin and place it in the middle of the oven.• Bake for about 60 minutes. The cake is ready when a skewer comes out clean.• Let the cake cool down a bit, remove it from the mold and let it cool further on a wire rack.• In the meantime, make the icing by mixing the icing sugar with the 30 ml of coffee.• Pour the icing over the cake. Please note: the cake must be completely cooled otherwise the icing will run off immediately. Place some pecans on the cake as a garnish and you are ready to serve this beautiful coffee cake!
